BASIC SCONES

For slight sweetness in the dough, add 1/4 cup sugar. For richness, use cream instead of milk, add 1 egg (decrease milk to 1/2 cup), or increase the amount of butter.

2 cups flour

21/2 teaspoons baking powder

1/4 teaspoon salt

4 tablespoons butter

3/4 cup milk

1. Preheat the oven to 400°F.

2. Sift together the flour, baking powder, and salt. Cut in the butter until the mixture is crumbly (a food processor helps here). Add the milk and blend well; the finished dough should be sticky.

3. Flour a flat workspace and knead the dough for about half a minute. Roll it out to about a H-inch thickness and cut into whatever shape you like (triangles are traditional). Bake for 15 minutes.

MAKES ABOUT 12 SCONES, DEPENDING ON SIZE.
